cutting surface

The right cutting surface is made from wood or synthetic material. If you use procelain, marble or glass as cutting surface, the blade will be blunt very quickly. Wooden boards are recommended for cutting dry food like bread for example; to cut raw meat or fowl, a synthetic cutting surface is preferable.
